Loubia Hamra – Fresh Borlotti Beans and Mutton Stew

Loubia Hamra meaning ‘red beans‘. Here we are talking Borlotti beans, but it can also refer to Kidney beans.

A mildly spicy mutton stew with shelled fresh Borlotti / Cranberry beans.

These beans are in season during late summer. I know, only two weeks left until its officially Autumn. Better late than never!

Back to Loubia Hamra – Borlotti Beans

I’m adding Mutton to flavour the Borlotti beans stew. It’s what we have in excess after Eid al-Adha. Use any meat you like. Cooking time may need reducing if using chicken.

You can also add off-the-bone chunks of meat, especially if you prefer a prettier end result. Again cooking time may need reducing.

Stewed Mutton and Cranberry Beans in a mildly spicy tomato sauce, flavoured with garlic, cumin and Harrisa.

You can up or lower the heat level by adjusting the amount of Harissa spice paste during cooking or, when serving.

Harissa – chilli spice paste is mainly used as a condiment in North African cuisine i.e. to add flavour to food after cooking. A good example of this is Garantita – savoury chickpea flour ‘flan’.
